If You See White Stuff on Your Salmon, This Is What It Means

If you notice white stuff on your salmon, it's likely albumin, a protein that appears when the fish is cooked.

Albumin is a natural protein found in fish, and it’s completely harmless. It shows up as a white, milky substance on the surface of the fish as it heats up.

When salmon is cooked, the proteins begin to coagulate, and this process forces the albumin out.

The appearance of albumin is more noticeable when cooking salmon at a high temperature or for a prolonged period, as the protein gets forced out of the fish

 It's also more common in wild-caught salmon, which tends to have a higher protein content compared to farmed salmon. 

If you're cooking your salmon at a low to medium heat, you'll reduce the chances of albumin appearing.

While albumin might look unappetizing, it doesn’t affect the flavor or safety of the fish. However, if you want to avoid it, try cooking your salmon at a lower temperature, or remove the albumin with a paper towel before serving
