Zucchini poisoning is a real, though rare, occurrence that can happen if zucchini is improperly prepared or consumed. 

While zucchini is generally safe and nutritious, certain conditions can lead to the buildup of toxic compounds, especially in homegrown varieties.

The primary cause of zucchini poisoning is toxins called cucurbitacins, which are naturally present in all members of the gourd family. 

These compounds are bitter and can cause nausea, vomiting, and diarrhea if consumed in large amounts.

Cucurbitacins are usually found in bitter-tasting zucchinis, which can occur when zucchini plants are exposed to stress, such as inconsistent watering or poor growing conditions. 

While commercial zucchini is typically safe, home gardeners should be cautious, particularly if they notice an unusually bitter flavor

If you encounter bitter zucchini, it's best to discard it, as even small amounts of cucurbitacins can cause gastrointestinal distress.
